A good basic White Sauce 

Everyone who wants to make their own homemade foods should know how to make a good basic white sauce. This can be the basis of so many great dishes such as carbonara, lasagne, macaroni cheese, chicken pies and many more, it is also the basis of other sauces such as cheese sauce.

A good white sauce is made using three basic ingredients along with a little salt and pepper to taste. You will need;

25g plain flour

30ml olive oil

240ml full fat milk

1/2tsp sea salt

1tsp crushed black peppercorn

The secret to a good white sauce is how you mix the ingredients, you can just chuck all the ingredients in together but you won’t get a very good white sauce and quite often it will be very lumpy.

The first thing you want to do is heat the milk gently over a medium heat in a saucepan or frying pan until warm (do not boil it).

In a large mug or small dish gently mix the olive oil and plain flour together until it is nice a smooth.

Slowly pour the warm milk into the flour and oil mixture gently stirring with a fork all the time.

Pour the mixture back into the saucepan or frying pan, return it to the heat and bring the sauce back up to a simmer whilst still stirring constantly. 

Continue to do this until you have the thickness that you want, remove the sauce from the heat and stir in the salt and pepper (or any other ingredients you want to use) and use immediately.

To turn your white sauce into an extremely nice cheese sauce add 80g of grated cheddar cheese (don’t use the ready grated cheese as it has flour on it to prevent the pieces sticking together and will result in a gritty sauce) when you add the salt and pepper, gently stir until it has all melted.

To make a blue cheese sauce simply use 80g of finely crumbled blue cheese instead of cheddar cheese.
